Blood Type B
Black Bean Salad with Quinoa Pasta
Ingredients: Serves 2
2 cans of organic black beans rinsed and drained
½ box of organic Quinoa pasta
½ of a fresh bunch of arugula leaves washed and shredded into a large bowl
½ bunch of fresh scallions washed and diced,
2 cloves fresh garlic diced
¼ cup chopped fresh cilantro washed/dried and chopped
1 tsp. cumin spice, lemon pepper spice and paprika spice
Sea salt sprinkle to your taste and cracked black pepper for beans, salad and Quinoa pasta
2” piece of ginger root grated in bean salad
1 tsp. virgin olive oil for beans, 1 tsp. virgin olive oil for salad,
½ lemon squeezed with pulp and zest
Directions:
In a medium size pot, bring 6 cups of water to a boil, add sea salt and Quinoa Pasta and boil al dente, (about 8 minutes). Drain pasta and set aside. Place rinsed beans in a bowl. Add olive oil, spices, cilantro, scallions, lemon and garlic evenly over beans. Mix beans with Quinoa pasta and mix well. Add 1 tsp. of olive oil and lemon with 2” grated ginger directly on your salad sprinkle sea salt and pepper to your taste, mix well and enjoy!
