Turkey Ginger Thighs, Sauté Pumpkin & Watercress Salad

 

Ingredients: Servings 2
2 -4 oz. pieces of Organic Turkey Thighs skinless and rinsed
½ can of organic diced pumpkin
1 full fresh bunch of watercress leaves washed and shredded into a large bowl
½ Spanish onion diced, 2 cloves fresh garlic diced
¼ cup chopped fresh rosemary
1 tsp. ginger powder spice
1 tsp. allspice
1 tablespoon fresh ginger Root grated for Turkey
Sea Salt sprinkle to your taste and cracked black pepper
2” ginger root grated in salad, tbsp. Virgin Safflower oil,
1 tbsp. rice vinegar for salad

Directions:
Pre-heat oven to 350F for 10 minutes. Place rinsed Turkey Thighs and diced pumpkin in a pan with grill. Add spices, rosemary, onion, and garlic evenly over Turkey and diced pumpkin and bake for 10 minutes occasionally marinating. Remove from oven when done and grate some Ginger lightly mix well. Add 1 tablespoon of olive oil and Rice vinegar with 2” grated ginger directly on your salad sprinkle sea salt & pepper to your taste, mix well and enjoy!
